Citric acid with a hydrogenated cotton seed coating.  This coating prevents the citric acid from being released into the meat during mixing and stuffing. 
Once the encapsulated citric acid reaches 150 degrees Fahrenheit, it is released from the capsule.  Sold by the pound.
